Lemon Peppered Tilapia

Here’s the set up, you have rowdy kids, no time to make a fantastic big meal but all the kids are starving and driving you insane. We’ve all been there, I’ve been there lately day by day. It’s been nuts! When things get like this, there are a few dinner I keep on hand to handle the chaos, one is fish. This recipe is simple, and it doesn’t seem like much but it has fed my family numerous of times in under thirty minutes. All you really need to do is find a side dish and that can be something as simple and quick like a salad, or steam green beans, or even asparagus. Simple, quick and healthy.

Keep in mind that measurements are not well..not measured at all this time. Why? Because when I’m cooking fish I season what is before me, there just isn’t a recipe really to follow. I throw caution to the wind, get all crazy and wild and just toss stuff over the place. Ok not that crazy, but you get the idea.


Lemon Peppered Tilapia

Ingredients
Fillets of Tilapia (easy mild fish to cook with)
Start with 1 stick of Butter
Lemon Juice or a Lemon sliced up
A little Olive oil
Pepper
Directions.
The easiest way to do this is by oven, you can grill, even cook on the stove but again crazy days you want simple and quick. Take a baking pan or dish, line with foil. Drizzle a little olive oil on the bottom. Taking your fish and spread them out evenly on the bottom. Take the butter, and cut half a tablespoon for each fish. You should have a cube (1/2 tablespoon) placed on each piece of fish. Place your lemon slices on each fish as well. Sprinkle with fresh cracked pepper or table pepper whatever you have on hand. Cover with Foil and place in oven which is at 350F for 15-20 minutes. Shouldn’t take 20 minutes but depending on how thick the fish is check to make sure fish is flaky that’s when its done.

My kids love this fish dish, it’s by far their favorite and it’s super easy as well as quick. If your feeling daring you can bread coat the fish after an egg wash then pan fry and serve with lemon as well. My kids often ask for fish taco’s this is how I do it!

  1. Looks sooo good. I love the mild taste of Tilapa, I usually use lemon juice- but the slices really make it look special!
