These cookies have no flour, and they do tend to cook flatter than most cookies but my kids adore them! They are excellent to drop into milk for an afternoon snack. I’m going to make more this summer and make them into ice cream sandwiches won’t that be a treat!

cookie

Ingredients

2 sticks of butter softened ( not melted)

1 cup sugar

1 cup brown sugar

3 eggs

1 /2 teaspoon vanilla extract

2 teaspoons baking soda

1 1 /2 cup creamy or chunky peanut butter

4 1/ 2 cups rolled oats

1 cup coconut

2 cups M& M ‘s

Directions

Set oven to 350F

Mix together the butter and sugars till creamy. Add in the eggs and mix between adding them. Add in the vanilla, baking soda and peanut butter. Cream it together till smooth. Add in the oats and mix. Using a large wooden spoon add in the M&M’s then the coconut till mixed in well. I find on a hot days it’s better to chill the dough before placing on the cookie sheets, but you can go ahead and drop by tablespoons onto the sheets. Bake about 10-13 minutes until slightly golden brown.

Let the cookies sit a minute after baking and then transfer to wire rack. Enjoy!
