Meet the Suadero Tacos and learn why you want to try this Mexican food

Suadero Tacos are very famous in Mexico, especially in the center and south zones, and even when I live in the north of Mexico, I knew about them because my friend was born in Mexico City. Suadero tacos are combined with onion, cilantro, spicy sauce and lemon, the overall presentation of the dish is very attractive and a single bite is everything that is required in order to fall in love with this delicious meal.

Suadero is not famous in the United States, but this cut of beef comes from the breast of the cow, which is the brisket, some places in the US cook the brisket and then call it Suadero, but actually they are not the same thing; even when both are beefy, I can tell you that when Suadero is cocked right it tastes very, very good, and the Suadero tacos can become an addiction (I say this because I saw it for almost two years) if you find the right chef. Unlike the brisket, Suadero is hard to chew, so it is critical to chop it in very little pieces so you can taste its flavor completely. The chopping process is typically done over a tree trunk, and it is by combining all these flavors and techniques that suadero tacos are full of flavor.

How are the Suadero Tacos prepared?

I’m not providing a recipe here but a few tips of how suadero is prepared. The best suadero is always marinated overnight using orange juice, salt, lemon, and pepper among other ingredients. It is required to cook it slowly to preserve its entire flavor; after this it is time to chop it (this may be hard) in very small pieces. If done correctly the smell will tell you everything, and before serving it is required to cook it again only to heat it up a little because the chopping process can take a while.

After all this is done is time to serve the suadero on a tortilla, add onion, cilantro, lemon, sauce, salt and you are ready to taste a delicious Mexican dish. The flavor of Suadero is different depending on the size of the bits of beef, the best suadero’s savor is achieved with little pieces of meat, and I have to say that very few chefs do this the right way, at least in the north of Mexico, but if you are traveling to Mexico City or any other cities around you should be able to have the best suadero tacos in the whole country.

Should I try Suadero Tacos next time I visit Mexico?

My answer to this question is: Absolutely yes. Personally I really like Mexican tacos, and I have to say that these are probably the best tacos that I’ve ever had, some people enjoy a lot the al pastor tacos but suadero is a complete new experience if the chef knows how to prepare them. My advice for you is have them the next time you travel to Mexico, this is one of the most typical and iconic flavors of the country and the best place to have these tacos is in Mexico City. As I told you these can be addictive so be prepared for that.
