Chicken Enchilada Soup

As cold as it is outside here, let me tell you that there isn’t anything better than some good soup!  Or is there? Actually having that soup cook in the crock-pot all day long with no extra work from you makes it even better. I am very excited to share my Quick and Easy Chicken Enchilada Soup Recipe with you.

What You Need:

    • 3 Medium/Large Size Cans of Chicken (depending on how meaty you want it).
    • 1 Can of Green Chillies
    • 1 Can Petite Diced Tomatoes
    • 1 Bag Frozen Corn
    • Black Beans Rinsed (I left these out)
    • 1 Packet Taco Seasoning
    • Chicken Broth (We’ll talk about the amount in a little bit)
    • Cream of Chicken Soup (Talk about how many cans in a bit)
  • A Sprinkle of Salsa Seasoning  (Not a must)
  • Shredded Cheese
  • Tortilla Chips
  • Sour Cream

How To:

  1. Put all the ingredients in a pan on the stove or in a crock-pot.
  2. Chicken Broth and Cream of Chicken need to be equal in the amount of cans that you put in
    1. You can add more of this if you need to stretch out the soup for a bigger crowd.
  3. Add a dash of Salsa Seasoning as well if you have some
  4. Bring to a boil if you cooked on the stove then it is ready. If you put in a crock-pot just wait until everything is warm enough.

When Finished, serve with shredded cheese, sour cream, and tortilla chips.

My Thoughts:

This is one of my favorite recipes. I love that I can throw everything together and then when I’m ready to eat I have a great mea. Throughout the holidays I took this soup to many different parties and dinners that we had. I was passing out this recipe everywhere that we went. My girls, ages 2 and 4, were huge fans of this soup as well as my husband :).

  2. This sounds great! I think Rotisserie chicken would add a lot of flavor. This is perfect when you want tacos without the heaviness of them.
