Whats for Supper? A New Southern Living CookBook

Making dinner can be both one of the most rewarding and at the same time the most tedious parts of the day. Reason being, a good meal on a Tuesday brings smiles to everyone’s face. But an ok one is simply ok, nothing special, just another meal. And we all get stuck in ruts from time to time, right?

For those of us who deal with this not so unique situation, there is a solution in the form of a new book by Southern Living- Whats for Supper: 30-Minute Meals Everyone Will Love. This book is written by Vanessa McNeil Rocchio, and is based upon the popular column in Southern Living magazine. It is packed with over 250 recipes which are all quick, easy, and home made. The recipes are broken up into various categories: from know by heart, which are either destined to be family favorites or will be family favorites with a touch of tweaking- for company, which will serve many and actually give you time to enjoy your friends and family instead of sweating in front of an oven- healthy, which are good for your taste buds and your body, and of course, kid favorites, which will get even the pickiest of eaters to gobble up every bite.

Beerlicious- A Fun New Cook Book

There are very few things that go as well together as grilling, summer, and beer. There is a great new cook book by the grill master Ted Reader called Beerlicious Volume 1. This fun book teachers readers not only how to grill like one of the best, but how to grill with beer as one of the ingredients. Yay, this was a hit with daddy! Sometimes as a marinade, sauce, or even an ingredient in a grilled cake.

Double chocolate stout German chocolate cake is one of the most interesting dessert recipes. I have to be honest in my house we love the grill and nothing beats a nice barbecue on a warm summer night. But we have never had cake on the grill and this book opens up some new doors for us. There is extensive explanation of grilling with planks, for both fish and cake recipes. Planks are flavorful pieces of wood nailed together and put on the grill which act as not only a container for cooking foods in but also a way to add a new flavor to your food. The beers included in the recipes range from the well known with Budweiser BBQ Spatcocked Chickens, and Buttermilk and Beck’ s NA Marinated Grilled Veal Chops to the micro brews Wellington County Dark Ale Coffee-Crusted Porterhouse with Roquefort Butter and Big Wheel Buttered Smoked Brisket. This book makes the perfect gift for both the beer lover and the griller in your life.

Vegetable Bake Recipe

Here’s a great summer veggie dish-

Vegetable Bake

This vegetable bake is fast and easy. Use any soup mix you’d like or simply season it to your liking and change things up. I didn’t use soup mix this time and just tossed basil, Parmesan cheese some pepper and garlic on it. Great summer dish!

1 envelope soup mix (onion, garlic mushroom, even ranch dip would work just don’t use full package)

1/3 cup grated Parmesan cheese

1 medium sized eggplant peeled and sliced

1 medium zucchini sliced

1 medium yellow squash sliced

Dining With Al Capone

The Kissimmee area has much to choose from when it comes to dining, but our favorite is dinner and a show. It’s a fun way to experience some local flavor, and who cares if it’s raining?

We ate at Capones Dinner and Show, an interactive experience that is cute for all ages. It was a whole lot of “kitch” and meant to be fun and silly. It reminded me of another restaurant chain’s slogan- “Delightfully tacky, yet unrefined”. It for sure fell under that category. One of the running gags of the evening was “Fork You!” while brandishing- you guessed it- a fork.

Medieval Times Dinner and Show

A feast for the eyes as well as the stomach, Medieval Times is a great show that the whole family can enjoy. No worries, the little ones won’t be afraid- the show is very tame (rated G!) while still offering tons of fun and action.

Make sure you arrive about an hour early to give yourself ample time to explore the Medieval Village, the only one in the country. Launched in Spain in 1973, and in Kissimmee, Florida just 10 years later, it is widely regarded as the longest running and most popular dinner attraction in North America- and I have to concur. During this 2 hour live performance, you and your family will experience a glace back in time- when knights defended the realm, and chivalry was not dead. We even did a “kiddie” version, my son loved it.
