Komodo Dragon Cake

100_2363100_2360100_2361First- let me say that I am not one of those people that can just “whip something up”, nor am I a fantabulous baker. This took me a LONG time to do, haha. Not perfect, but hey! (it tasted good, so shhhhh on the non-perfection, lol)

Second- I don’t like fondant. It’s gross. I made icing and covered it with green sugar and dyed green coconut, and it turned out pretty well I think, for a non-master-baker like myself.

What I Used

Two nine-inch round cakes. Cakes made from scratch will be denser and stronger than a cake mix- just be forewarned that the time you save using a mix will be spent cursing during the frosting crumb coat.

Sandwich Showdown- New York Food and Wine with @udisglutenfree @I_LOVE_NY

Come one, come all to one of the most fun you can have with two slices of bread. This past Sunday The Whole Foods Market’s Sandwich Showdown was held with Jeff Mauro. Jeff Mauro is the sandwich king from Food Network, and can make one awesome sandwich. This event was held to help raise money for various charities. This event was all about the sandwiches. There were more then fifteen sandwiches to try, with just about every ingredient imaginable, from Turkey to Pastrami, to Porchetta and even gluten free cookies from Udi’s Gluten free, and three varieties of ice cream sandwiches, all of which were delicious.

Upon walking in, each guest is given a wooden chip to cast their vote for the best sandwich available. The only sad point was when realizing the event was over, not because of a timer running down, but because of a lack of space in your stomach. With all the sandwich crafters available, we could talk for hours about every sandwich available and the wonderful wine bar as well, but instead we will highlight some of the stand-out sandwiches.

Chicken Littles- Now Available

KFC is re-launching the new and improved Chicken Littles, which are now back on the menu and available for the little price of $1.29. KFC has not sold Chicken Littles in more than 20 years, but it is back by popular demand. A recent poll on the KFC Facebook page revealed that Chicken Littles was the overwhelming favorite among items they’d like back on the menu.

Vegetarian Lasagna Recipe

I love making this dish for several reasons, one of course it feeds a large hungry family, second it’s super easy and third you can freeze it and re-heat or cook it at a later date. It’s been super busy with school and activities which most of you can relate too. This dish is hearty, and believe it or not easy to set up.

My favorite way to make this is with garden vegetables, but you can use meat, I used peppers, zucchini and eggplant for a vegetarian dish. I have never used no boil lasagna noddles before but have been told by many they use my easy recipe with it and it comes out even quicker, you choose what you’d like!

I make it extra cheesy. 🙂

Ingredients

1lb of your choice vegetables washed, skinned and sliced (eggplant, zucchini and red bell peppers fit nicely together. Make sure they are not sliced thickly, or it will take longer to cook.

2-3 cups of your favorite tomato sauce or 3 pint jars homemade tomato sauce.

Lasagna noddles either oven ready (no boil) or cook regular lasagna noddles as directed on package.

2 teaspoons Italian seasonings
