Simple Tomato Side Dish

Summer is right around the corner and the fresh tomatoes will be endless! If you are like me and my family with our booming garden full of vegetables we find simple quick ways to add some vegetables sides to our meals. This is super easy, and you can dress it up or even down really.

Ingredients

3 tomatoes you can use the same variety or use different kinds. Slice them up

1 small yellow onion chopped small

1 garlic clove minced

1 small pepper ( red or green) chopped small

Red wine vinegar ( about 2 shot glasses full or 4oz)

Pepper to taste

2 leaves Fresh parsley chopped

2 sprigs cilantro chopped

 

Directions. Using a serving tray arrange sliced tomatoes on plate. Mix the chopped onion, garlic, pepper and fresh parsley and cilantro together. Sprinkle this over arranged Tomatoes. Drizzle with Red Wine Vinegar, I use about 2 shot glasses and it is enough so 4 oz. Sprinkle with pepper and serve immediately.
