Katsu Chicken

Katsu chicken is a Hawaiian/Japanese dish that just about anyone likes, including kids!

Katsu Chicken is essentially just Hawaiian fried chicken. It is so simple to make and also, not to bad on the pocketbook. It is served with a special BBQ sauce that can be purchased or made. What is really awesome about this main dish is, it is relatively quick to put together.

To make Katsu Chicken, you will need:

Boneless, Skinless Chicken Breasts or Thighs

Panko Bread Crumbs

3 eggs OR 1 cup milk

Vegetable oil for frying

 

To start, butterfly the chicken and slice thin, horizontally. Heat the oil in a deep skillet or wok to med-high.

Dip (not soak!) the chicken in milk or eggs (that are broken up with a fork).

Press them into the panko and make sure they are well coated.

Slowly, drop the chicken into the oil. Cook until golden brown and 165 F.

Slice into pieces and top with Katsu sauce. (See recipe below)

The can be served with vegetables and rice.

 

Katsu Sauce:

2/3 Cup Ketchup

1/2 cup brown sugar

1/2 cup soy sauce (I use Aloha Shoyu)

2 1/2 Tbsp Worcestershire sauce

1 tsp apple cider vinegar

 

To make, simply mix together and serve over Katsu Chicken.
